Silk Roads Lentil Soup to Nourish Body and Soul!

One of the joys of teaching yoga and mindful movement is the incredible community that comes with it. Beyond the poses and stretches, it’s the small everyday connections — sharing tips, recipes, and little acts of care — that make it so special.

 

Today, I'm excited to share this favourite recipe from one of our students: a hearty, comforting, and nourishing lentil soup. Perfect for cozy evenings, family dinners, or a wholesome lunch to keep you energized.


Fun Fact: This recipe appeared in The Ottawa Citizen on Jan 23, 1991, when they would solicit asked-for recipes from restaurants.


Ingredients

  • 1 pound of red lentils (2 to 21/4 cups)

  • 1quart water

  • 1 tbsp salt

  • 1/2 cup veg oil

  • 2 medium onions, finely chopped

  • 2 medium tomatoes, finely chopped

  • 1/4 tsp cayenne pepper

  • 1 tbsp ground coriander (or less)

  • Juice of a quarter lemon for each serving


Instructions

  • Combine lentils, water and salt. Bring to a boil, and cook 5 minutes until lentils are soft.

  • In a frying pan heat the oil and sauté onions and tomatoes. Add cayenne and coriander.

  • Simmer until the mixture becomes sauce-like in consistency.

  • Add the sauce to the pot of lentils and simmer for 5 minutes.

  • Serve soup squeezing 1/4 lemon over each serving.
