No-Bake, Sugar-Free, Gluten-Free, VEGAN Sweet and Salty Granola Clusters
I've been searching for granola that would keep in tight clusters like these, but I never imagined how fabulous they could really be! The best part is they are No Bake, Sugar-Free, Gluten-Free, and . . . . . You guessed it: VEGAN! All rolled up in one super-yummy bite-sized treat. Enjoy!
Ingredients
4 cups of kasha
1/4 cup pumpkin seeds
1/4 cup sliced raw almonds
1/4 cup unsweetened, shredded coconut
1/4 cup raw sunflower seeds
1/4 cup black currants
1/4 cup raisins
1/4 cup maple syrup
3/4 Tbsp salt
1/2 cup melted organic coconut oil
2 tsp pure vanilla
Instructions
Combine all dry ingredients (sprinkle 1/8 of salt among dry ingredients)
Melt the coconut oil on low heat
Add the oil and mix well
Add the maple syrup and mix well. Add a dash or two of salt to each of these steps
Add the vanilla
Pour the mixture into a large glass baking dish and place in the freezer to set. Ready to enjoy within 40 minutes!
